Co-milled tomato / dill olive oil made for the first time in 2025 with hand harvested Sevillano estate grown olives from our BLOCK X. BLOCK X has over ten varieties, some rare and some original California ones, like Manzanillo, Sevillano, and Mission. Our beautiful Sevillano olives, also known as ‘Queens’ because of their large size, are commonly grown for table olives. At Olivaia we carefully select some of our historic ‘Queens’ to produce a majestic extra virgin olive oil that is rare, delicate, and as unique as the olive it is made from. Crushed with the olives are freshly picked tomatoes and dill from farmers in Central California who care as much about their produce as we do about our olives.
